- Use fresh water. Always start with freshly drawn water — never re-boil it, as this flattens the taste.
- Bring it to a rolling boil. Assam black tea is bold and benefits from fully boiling water (around 100°C).
- Measure the tea. Use roughly one heaped teaspoon of EmberGlow Gold Tea per cup.
- Steep, don’t guess. 3–5 minutes is the sweet spot. Longer means more strength but also more bitterness.
- Add milk and sugar to taste. Assam’s malty character is made for a splash of milk — the classic Indian chai style.
For a stronger brew, add a little more tea rather than steeping longer — it keeps the cup smooth instead of harsh. Enjoy your tea hot, or cool it, add ice and a squeeze of lemon for a refreshing iced Assam.
